Whole Oregon Dungeness Crab

2 live whole crab
2 onions peeled & quartered
2 Tbsp Old Bay seasoning
1/4 cup salt
3 lemons halved & juiced (keep rinds)
6 stems fresh thyme
10 parsley stems
1 cup white wine vinegar
3 gallons water
½-pound butter

In your biggest pot, bring water to rapid boil. Add 1/4 cup of salt, vinegar, parsley, thyme, Old Bay, onions, lemon juice, and lemon rind. Allow water to return to a boil. Gently add live crab to the water and return to a full boil, then boil for 12-13 minutes. Melt butter. Remove crab from the pot and allow to dry for a moment. With pastry brush, brush the shell with warm butter. Serve immediately with the remaining butter.
