Oregon Dungeness Crab Roll

1/3 cup celery, finely chopped
¼ cup yellow onions, finely chopped
¼ cup mayonnaise
¼ tsp dry mustard
¼ tsp dry tarragon
1 tsp ground black pepper
3 drops Tabasco
3 tsp lemon juice
1 pound Dungeness crab meat, strained
¼ cup green onion, sliced
¼ cup roasted red bell peppers, julienne, strained
1-2 baguettes (depending on size), cut for sandwiches
Directions:
Toast baguettes. Mix celery, yellow onion, mayonnaise, dry mustard, tarragon, black pepper, tabasco and lemon juice in a bowl. Add Dungeness crab, green onion and roasted red bell peppers, mix well. Place on toasted loaves, over a green salad, or your favorite bread! Serves 3-4.
